Didn't see any of this final so can't comment on either players performance or anything like that.
But it's an important win for O'Sullivan. Obviously not as important as last May, but after Trump had won a number of finals in recent seasons its important that O'Sullivan respond with a few wins of his own.

No. That would be an exhibition in lieu of an evening session.

Whats important is that you want to keep winning titles as the current World Champ and World number 1. And show everyone you're the best. And the CoC is a tournament with high reputation. Arguably its the first really big tournament of the season. The next is around the corner.

Technically the outcome of a single match would in sufficient to refute the original claim. Even if O'Sullivan only had only a three in ten chance, that would still happen quite a lot!
