Yeah, like you say, it always says subject to change.
Now most of the time, players aren't going to pull out due to illness. It might be different this year, of course. But I think all the subject to change means that some players may pull out for being a coronavirus risk. I doubt they'll move any of the scheduled sessions around. Subject to change means, a player might pull out if it's not safe to play. Not that Ding's match will go from being on the Saturday afternoon to the Monday morning for no reason.

Yes, it's obviously sensible to say 'subject to change'. It's possible because the players will be in a bubble, so their travel arrangements aren't impacted. In normal times, other sports (e.g. tennis) have the potential for players to withdraw due to injury. Snooker is fortunate that things like that have happened very rarely. All sorts of things could happen to force a change.
