Dennis Taylor at 36 if you are looking at a first time World Champion, otherwise its Reardon at 45 in 1978 and Spencer at 41 in 1977

Taylor in 1985 at 36 years, 4 months. Reardon was older when he won his first but that was pre-Crucible in 1970.
