Jim Wych?
Labyrinth was directed by Jim Henson. Which? provides assistance to consumers.

Not Jim Wych. Prop’s logic is closest so far but I’d say needs another step in each case.

Amazingly, even though your result is a mile off, your logic is actually heading in the right direction on both counts!
This clue refers to surname only.
I’d never heard of him either tbh

Pang Junxu
Pan's labyrinth
Gee up means encourage, which you could loosely say gives assistance to something.

Ursenbacher?
Bacher > backer > helper
Ursula Major is a constellation, which could be described as a maze of stars.

Not Pang or Ursenbacher.
I’ll hold of on additional clues for now to give other posters a chance to look at what’s been said so far.

Ben Hancorn?
The corn bit is logical enough. Labyrinth > maze > maize
And I’m not too knowledgeable about Star Wars, but was Han Solo an assistant / fixer of sorts?
Good shout by LDS, by the way. I think he’s got it.

Nope, you got it!
Your maze/maize logic is spot on.
Han = hand, as in assisting someone being “giving someone a hand”. Bit cheeky on my part, that.
LDS’s guess is great though and probably the better answer than the real one!

Oh! I did think about hand / Han, but thought it was way too ambiguous

Not Mike Hallett. However, you’ve solved the easy half. This should give you a reference point to work with.

Nope, not Pagett. There are quite a few steps to take in order to find the solution.

I want to say Martin Gould.
There are so many clues here though, and he doesn't fit all of them.
The more clues that come, the harder this one seems to get! I bet I'll kick myself when it's revealed

Not Martin Gould.
One half of the clue has already been (sort of) solved.
The other half is much more complicated. There are multiple degrees of extrapolation.
Look at symbols, and perhaps numbers.
