Only that amines are components of some foods. I guessed it must be a foreign player because firstly, the given name must be unique in snooker, which rules out most western-named players, and secondly your choice to say 'given' name instead of 'first' name, made me suspicious that it might be a Chinese player with their given name second.

I thought it might be something to do with ‘umami’. It’s now recognised as a taste, along with sweet, sour, bitter and salty, but before 2002 the umami receptors in the mouth weren’t discovered, and umami wasn’t exactly a thing. So I suppose umami could be described as once being a ‘hidden taste’.
So it could be a player born in 2002, or a player with a given name that’s perhaps an anagram of umami.
That’s as far as I got!
